The project, which was originally inspired by the best US East Coast steakhouses, is aimed at providing the best meat to our clientele.
An Angus and Kobe hut is being created in Ibiza with the most advanced systems for breeding semi-wild cattle with the aim of obtaining the best local hormone-free beef. It will have a meat drying unit, which will eliminate the animals’ stress during transportation and help to reduce the greenhouse effect.
The restaurant features a salt chamber built from Himalayan salt bricks where the different meats are preserved in the ideal temperature and humidity to attain a level of curing that entices the palate.
Customers can choose from the different cuts displayed in the large climate-controlled “Cuts Gallery.” It is the starting point for a process that continues with the preparation of the meat over charcoal, finished in our state of the art Josper and rested until perfection in our very own thermodyne, and concludes with the serving of a mouth-watering dish.
